Ingredients :

  • 3 medium zucchinis, grated
  • 1 large onion, finely chopped
  • 4 slices of bacon, chopped (optional)
  • 1 cup grated cheddar cheese
  • 1 cup self-rising flour
  • 5 eggs
  • 1/4 cup olive oil
  • Salt and pepper to taste

Preparation Method :

  1. Preheat your oven to 180°C (350°F). Grease a rectangular baking dish or line it with parchment paper.
  2. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to allow excess moisture to drain. Then, squeeze out any remaining liquid from the zucchini and transfer it to a large mixing bowl.
  3. In a frying pan, heat a small amount of olive oil and sauté the chopped onion and bacon (if using) until the onion is translucent and the bacon is cooked. Remove from heat and let it cool slightly.
  4. Add the cooked onion, bacon, grated cheese, self-rising flour, eggs, olive oil, salt, and pepper to the bowl with the grated zucchini. Mix well until all the ingredients are combined.
