Chicken Fajitas Crock pot:

Chicken Fajitas Crockpot

  • 2 pounds of boneless, skinless chicken breasts or thighs, thinly sliced
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 3 cloves of garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 2 tablespoons of olive oil
  • 2 tablespoons of fajita seasoning mix (store-bought or homemade)
  • 1 teaspoon of chili powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper (optional for added spiciness)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Flour tortillas (for serving)

Preparation method:

Prepare the Chicken and Vegetables

  • Begin by thinly slicing the boneless, skinless chicken breasts or thighs. For even cooking, try to keep the pieces uniform in size.
  • Next, thinly slice the onion and the colorful bell peppers into strips. This vibrant mix of peppers adds both flavor and visual appeal to your fajitas.
  • Mince the garlic cloves, as fresh garlic will enhance the overall taste of the dish.

Step 2: Season the Chicken and Vegetables

  • In a small bowl, mix the fajita seasoning, chili powder, ground cumin, paprika, cayenne pepper (if using), salt, and pepper. This spice blend will infuse the chicken and vegetables with a burst of flavor.

Step 3: Assemble in the Crock pot

  • Drizzle a bit of olive oil at the bottom of your Crock pot to prevent sticking.
  • Add a layer of sliced onions, bell peppers, and minced garlic to cover the bottom.
  • Place the thinly sliced chicken on top of the vegetables.
  • Sprinkle the spice blend evenly over the chicken, ensuring that each piece is well-coated.
  • Add the drained diced tomatoes on top, which will add juiciness to the dish during cooking.

Crockpot Cooking

  • Set your Crockpot to low heat and let the ingredients cook for 4 to 6 hours. Alternatively, you can cook on high heat for 2 to 3 hours. The longer, slower cooking time will allow the flavors to meld together beautifully.

  • Once the cooking time is up, your Chicken Fajitas should be tender and bursting with aroma.
  • Warm up your flour tortillas and scoop the chicken and vegetable mixture onto each one.
  • Garnish with chopped fresh cilantro to add a refreshing touch.
