Potato Green bean Salad

Preparation time – 15 – 20 min…

Ingredients…

  • 1 pound & Kg (450 grams) of potatoes, peeled and cut into bite-sized cubes
  • (225 grams) of fresh green beans, trimmed and cut into 1-inch pieces
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of fresh parsley, chopped
  • 2 tablespoons of Dijon mustard
  • 2 tablespoons of white wine vinegar
  • 1/4 cup of extra-virgin olive oil
  • Salt and pepper to taste

Preparation…

  1. Fill a large pot with water and add a pinch of salt. Bring the water to a boil.
  2. Add the potatoes to the boiling water and cook for about 8-10 minutes, or until they are tender when pierced with a fork.
  3. In the last 3 minutes of cooking the potatoes, add the green beans to the pot. This will blanch the green beans and keep them crisp.
  4. Drain the potatoes and green beans and transfer them to a large bowl.
  5. In a small bowl, whisk together the Dijon mustard, white wine vinegar, and olive oil until well combined. Season with salt and pepper to taste.
  6. Pour the dressing over the potatoes and green beans, and add the red onion and parsley.
  7. Gently toss all the ingredients together until they are well coated with the dressing.Taste and adjust the seasoning if needed.
  8. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld together.
  9. Before serving, give the salad a gentle toss again to redistribute the dressing.
  10. Serve the potato and green bean salad chilled.
