Ingredients..

4 boneless, skinless chicken breasts

Salt and pepper to taste

1 tablespoon olive oil

For the vegetable stuffing:

 

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves of garlic, minced

1 small zucchini, diced

1 small yellow squash, diced

1 cup cherry tomatoes, halved

1 cup baby spinach, chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

 

Preparation Method…

1.Preheat your oven to 375°F (190°C).

2.Start by making the vegetable stuffing. Heat 1 tablespoon of olive oil in a skillet over medium heat.

3.Add the chopped onion and minced garlic to the skillet and sauté until the onion becomes translucent and fragrant.

4 Add the diced zucchini and yellow squash to the skillet and cook for about 3-4 minutes, until they start to soften.

5 Stir in the cherry tomatoes and cook for an additional 2 minutes.

6.Finally, add the chopped spinach and cook until wilted. Remove the skillet from heat and let the mixture cool slightly.

7.Butterfly the chicken breasts by slicing horizontally through the middle, being careful not to cut all the way through. Open the breasts like a book and lightly pound them to an even thickness.

8.Season the inside of each chicken breast with salt and pepper.

9.Spoon the vegetable stuffing onto one side of each chicken breast, then sprinkle Parmesan cheese on top of the stuffing.

10.Fold the other side of the chicken breast over the stuffing, creating a pocket. Secure with toothpicks, if needed.

11.Heat 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat.

12 .Place the stuffed chicken breasts in the skillet and cook for about 3-4 minutes on each side until they turn golden brown

13.Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the chicken is cooked through and no longer pink in the center.

14.Remove from the oven and let the chicken rest for a few minutes before serving.
