200 grams paneer (Indian cottage cheese), cubed

2 tablespoons butter

1 tablespoon oil

1 large onion, finely chopped

2 tomatoes, pureed

1 tablespoon ginger-garlic paste

1 green chili, slit (optional for heat)

1 teaspoon Kashmiri red chili powder

1/2 teaspoon turmeric powder

1 teaspoon garam masala

1 teaspoon dried fenugreek leaves (kasuri methi)

1/2 cup heavy cream

Salt to taste

Fresh cilantro leaves for garnish

Preparation method :

  1. Heat butter and oil in a pan over medium heat. Add the chopped onion and sauté until it becomes translucent and lightly browned.
  2. Add ginger-garlic paste and green chili (if using). Sauté for a minute until the raw smell disappears.
  3. Add the tomato puree and cook for 5-6 minutes until the raw flavor of the tomatoes is cooked off and the mixture thickens.
  4. Stir in the Kashmiri red chili powder, turmeric powder, garam masala, and salt. Mix well and cook for another 2-3 minutes.
  5. Add the cubed paneer to the masala mixture and gently stir to coat the paneer with the sauce. Cook for 2-3 minutes, allowing the paneer to absorb the flavors.
  6. Crush the dried fenugreek leaves between your palms and sprinkle them over the paneer. Mix well.
  7. Pour in the heavy cream and stir to combine. Let it simmer for a couple of minutes, until the gravy thickens.
  8. Taste the curry and adjust the seasoning if needed. If you prefer a spicier curry, you can add more Kashmiri red chili powder or garam masala at this stage.
  9. Remove from heat and garnish with fresh cilantro leaves.
