Ingredients!

1 cup dried lentils (green or red)

1 tablespoon coconut oil

1 onion, diced

3 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon curry powder

1 teaspoon cumin

1 teaspoon turmeric

1 can (14 oz) coconut milk

1 can (14 oz) diced tomatoes

2 cups vegetable broth

2 cups spinach or kale, chopped

Salt and pepper to taste

Fresh cilantro, for garnish

 

Preparation method!

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pot and cook for another minute.
  4. Add the curry powder, cumin, and turmeric to the pot. Stir well to coat the onions, garlic, and ginger with the spices.
